Ingredients:
Bread 300g
Coconut milk 400ml
Sugar 1 ½ cups
Eggs 3
Crushed nutmeg 2 tsp
Method:
- Cut 300g of bread into cubes.
- Place the bread cubes in a large bowl and pour 400ml of coconut milk over them. Let them soak for 10–20 minutes, until the bread has absorbed most of the coconut milk.

- Preheat your oven to 180°C (about 350°F).
- Grease a baking dish or line it with parchment paper.
- Pour the bread mixture into the prepared baking dish.
- Bake for 15–20 minutes, or until the top is golden brown and the pudding is set.
- Let the pudding cool slightly, then drizzle a little condensed milk on top for an extra touch of sweetness.
Serve warm or at room temperature and enjoy this delightful dessert!
Tips for the Perfect Bread Pudding
- Use Day-Old Bread: Day-old bread works best as it soaks up the coconut milk without becoming too mushy.
- Make sure to mix the ingredients well to avoid lumps and ensure an even texture.
- Add raisins, chocolate chips, or nuts for extra flavor and texture.
- Keep an eye on the pudding while it bakes to ensure it stays moist and doesn’t dry out.
This coconut milk bread pudding is a wonderful twist on a classic dessert. It’s easy to make, incredibly flavorful, and perfect for satisfying your sweet tooth. Give it a try and see why my great-grandma’s recipe is a cherished family favorite!
